PARSLEY JUICE
The juice of parsley is not to be derided for although it has a strong bitter flavour it is an outstanding source of organic iron, containing more of this mineral than any other green-leaf vegetable. It is an excellent source of Chlorophyll, a good source of sodium and the highest vegetable source of Vitamin A. Parsley juice is credited with great blood-cleansing properties. Because of its ethereal oil it is diuretic in action. It allays fever and is very effective as a remedy for dropsy. Parsley juice is an intensive cleanser of the kidneys and is therefore indicated in all cases of rheumatism, liver and bile disorders, high blood pressure, gallstones, menstrual irregularities and diseases of the urinary tract. It should be noted that not more than one tablespoon of parsley juice should be taken at a time as the juice is very strong and if taken in excess, is liable to over-stimulate the nervous system. It is best taken combined with carrot juice or celery juice in the proportion of 7 parts of carrot or celery juice to one part of parsley juice. When carrot, celery and parsley juice are combined they offer an excellent corrective for eye trouble. One or two pints (.2 to 1 litre) daily of this combination have corrected eye weakness in a few weeks, making the use of glasses unnecessary.
